Single-wall bottles are exactly what they sound like — one layer of stainless steel. They're lighter and cheaper to manufacture, but they offer no insulation. Your cold drink sweats, your hot drink becomes cold in 20 minutes.

Double-wall bottles have an air gap between two layers of steel. Without vacuum, this provides modest insulation — maybe 2–3 hours for hot drinks. With vacuum — where the air between the walls is removed — insulation jumps to 12–24 hours.

The vacuum is created during manufacturing by welding the inner and outer walls together, then removing air from the space between them through a small hole, which is then permanently sealed. This absence of air eliminates convection heat transfer — the main way heat moves.
